“Grilled” Chicken Tenderloin

This chicken recipe is delicious!   Add a baked potato and some veggies for a complete meal.

  • 4 boneless, skinless chicken breasts, cut into strips
  • 1 cup zesty Italian dressing
  • 2 tsp lime juice
  • 3 tsp honey
Method:
  • Mix marinade, and add chicken strips. Marinate, refrigerated,  for at least an hour.
  • Pour everything into a large skillet and cook over medium heat until the liquid evaporates and remaining marinade is thick and carmelized.
  • Turn every 10 minutes or so. Coat each piece of chicken by rubbing it around in the carmelized marinade in the bottom of the pan.
  • Takes approximately 40 minutes.

Yuuuuummy!!

Frugal Notes:
  • This recipe is easy to make ahead and freeze.  Just thaw it out in the morning, and it’ll be ready to cook for dinner.  It marinates during the thawing process.
  • Make it once, and if your family loves it, next time make it in bulk and freeze it in meal-sized portions when there is a sale on chicken.  Don’t use raw chicken from your freezer and refreeze it raw.
  • I only buy boneless, skinless chicken breasts.  They can be expensive, so whenever there is a sale ($1.99/lb or less), I buy a lot and freeze them.  Some I freeze individually, some I cook, and cube, and then freeze.  I’ll be exploring this in future posts.
  • The Italian dressing can often be purchased for pennies buy using sales combined with coupons.
