This chicken recipe is delicious! Add a baked potato and some veggies for a complete meal.
- 4 boneless, skinless chicken breasts, cut into strips
- 1 cup zesty Italian dressing
- 2 tsp lime juice
- 3 tsp honey
Method:
- Mix marinade, and add chicken strips. Marinate, refrigerated, for at least an hour.
- Pour everything into a large skillet and cook over medium heat until the liquid evaporates and remaining marinade is thick and carmelized.
- Turn every 10 minutes or so. Coat each piece of chicken by rubbing it around in the carmelized marinade in the bottom of the pan.
- Takes approximately 40 minutes.

Frugal Notes:
- This recipe is easy to make ahead and freeze. Just thaw it out in the morning, and it’ll be ready to cook for dinner. It marinates during the thawing process.
- Make it once, and if your family loves it, next time make it in bulk and freeze it in meal-sized portions when there is a sale on chicken. Don’t use raw chicken from your freezer and refreeze it raw.
- I only buy boneless, skinless chicken breasts. They can be expensive, so whenever there is a sale ($1.99/lb or less), I buy a lot and freeze them. Some I freeze individually, some I cook, and cube, and then freeze. I’ll be exploring this in future posts.
- The Italian dressing can often be purchased for pennies buy using sales combined with coupons.
